  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, finely chopped
  • 4.5 oz white chocolate, finely chopped
  • 5 oz milk chocolate, finely chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth.
  3. Combine wet ingredients with dry ingredients and add hot water mixed with espresso powder.
  4. Pour batter into prepared pans and bake for about 35 minutes. Cool completely before removing from pans.
  5. For the mousses: Whisk egg yolks with sugar and cornstarch; heat one cup of cream until steaming and temper the egg mixture.
  6. Combine tempered custard with melted chocolates; fold in whipped cream to create both dark and white mousses.
  7. Assemble: Place one cake layer on a plate; spread dark mousse on top followed by white mousse. Chill before adding the second layer on top.
  8. Prepare ganache by heating cream until steaming; pour over chopped milk chocolate and stir until smooth.
  9. Pour ganache over chilled cake; let set before garnishing as desired.
