  • 1 large boneless turkey breast half (about 2 1/2 lbs)
  • 5 ounces whole wheat french bread (cut into small cubes)
  • 3/4 cups chicken broth
  • 2 tablespoons dried cranberries (chopped)
  • 1 large egg (beaten)
  • 1/4 cup all-purpose flour
  • 11/4 teaspoons kosher salt
  • 6 to 8 pieces cooking twine
  • 1 teaspoon salted butter (softened)
  • 1/2 tablespoon butter
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 1/4 cup chopped parsley
  • 1/2 teaspoon turkey or poultry seasoning
  • 1/4 teaspoon kosher salt and fresh pepper (to taste)
  • 2 cups turkey or chicken broth
  • 2 leaves fresh sage
  • 3/4 teaspoon turkey or poultry seasoning
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry and season generously with kosher salt.
  2. In a skillet, melt half a tablespoon of butter over medium heat. Sauté minced onions and celery until soft, about 5 minutes. Stir in sage, parsley, turkey seasoning, salt, pepper, beaten egg, chicken broth, bread cubes, and chopped cranberries.
  3. Spread the stuffing over the turkey breast and roll tightly from one end to another. Secure with cooking twine.
  4. Place seam-side down in a roasting pan. Dot with softened butter and pour chicken broth around it. Cover loosely with foil and bake for 45 minutes; then remove foil and bake for an additional 15 minutes until golden brown.
  5. For gravy, whisk flour with remaining broth in the pan over medium heat until thickened.
