  • 4 small sweet potatoes
  • 1 bag shredded lettuce (8 oz)
  • 1 red onion
  • 1 pint diced tomatoes
  • ½ cup pickles
  • special sauce
  • 2 tsp worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tablespoon avocado oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into bite-sized pieces. Toss with avocado oil, garlic powder, onion powder, salt, and pepper.
  3. Spread on a lined baking sheet and bake for 30–40 minutes, flipping halfway until golden brown.
  4. In a skillet over medium heat, cook ground beef until browned (about 8 minutes). Add Worcestershire sauce and seasonings; mix well.
  5. Assemble bowls: start with shredded lettuce, add roasted sweet potatoes, seasoned beef, red onions, diced tomatoes, pickles, and drizzle with special sauce.
