  • ½ cup brown sugar (packed)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 1 large egg (room temperature)
  • ¼ cup brown sugar (56g)
  • Pinch table salt
  • ¼ cup whole milk (2oz)
  • â…“ cup coarse sugar for rolling (78g)

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a bowl, whisk together flour, pumpkin spice, and salt.
  3. In another bowl, beat cream cheese and butter until smooth; gradually mix in sugars.
  4. Add egg yolk and vanilla; combine well.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by whisking together one egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla until smooth.
  7. Roll cookie dough into balls and coat in coarse sugar; make an indentation for the filling.
  8. Fill each indentation with the pumpkin filling mixture and bake for about 15 minutes or until edges are golden.
  9. Cool slightly before serving.
