  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. 1. Marinate the chicken: Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  2. 2. Cook the rice: In a saucepan, combine basmati rice and chicken broth. Bring to a boil, then reduce heat and cover. Cook for 15 minutes until tender.
