  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
  3. In a bowl, beat cream cheese until smooth, add sugar and eggs one at a time, then fold in sour cream.
  4. Spread cheesecake filling over crust.
  5. Toss diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice; layer over cheesecake filling.
  6. For crumble topping, mix flour, brown sugar, cinnamon, and cubed butter until crumbly; sprinkle on top.
