  • 1/4 cup/ 27g coconut flour
  • 2 eggs
  • 1/2 cup/ 125g pumpkin puree
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon melted coconut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon dairy free milk

Instructions

  1. Preheat your oven to 160C/350F.
  2. In a large bowl, whisk together eggs, pumpkin puree, honey (or maple syrup), and vanilla.
  3. Add coconut flour, pumpkin spice, cinnamon, and baking powder; mix until smooth.
  4. Fill each mini muffin hole about 3/4 full with batter.
  5. Bake for 15 minutes or until golden brown and firm to touch.
  6. For the glaze, mix melted coconut butter, maple syrup, and dairy-free milk in a small bowl. If needed, microwave for easier mixing.
  7. Once cooled slightly, dip donut holes in the glaze.
