  • 1 lb ground chicken
  • 2 tsp olive oil
  • 1/2 cucumber (diced)
  • 1/4 red onion (diced)
  • 1/4 cup kalamata olives (sliced)
  • 1 cup coconut yogurt
  • 2 tsp fresh dill (chopped)
  • 3 tbsp cucumber (diced)
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Juice of half a lemon
  • Rice or cauliflower rice

Instructions

  1. For the Greek salsa, combine diced cucumber, red onion, sliced olives, lemon juice, dill, parsley, salt, and pepper in a bowl. Refrigerate to chill.
  2. To make tzatziki, mix coconut yogurt with diced cucumber, dill, garlic powder, salt, and lemon juice in another bowl. Refrigerate.
  3. In a skillet over medium heat, warm olive oil and add ground chicken. Cook until no longer pink. Stir in garlic powder, onion powder, oregano, dill, parsley, salt, and lemon juice.
  4. Assemble the bowls by serving the chicken over rice or cauliflower rice topped with Greek salsa and tzatziki.
