  • 2 teaspoons instant dry yeast
  • 2 cups warm water
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces Gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • 2 teaspoons Maldon sea salt flakes

Instructions

  1. Prepare the Dough: In a large bowl, mix warm water, sugar, and yeast. Let it sit until bubbly. Add bread flour, fine sea salt, and olive oil; mix until a dough forms.
  2. Knead and Rise: Knead the dough on a floured surface until smooth. Place it in a greased bowl covered with a damp cloth to rise for about an hour or until doubled in size.
  3. Shape Your Focaccia: Punch down the risen dough and transfer it to a greased sheet pan. Stretch to fill evenly and create dimples on the surface.
  4. Add Toppings: Drizzle olive oil over the top, press in cubed Gruyère cheese and thyme leaves, then sprinkle with Maldon sea salt flakes.
