Ingredients

Scale
  • 2 1/4 teaspoons instant yeast (or active dry yeast)
  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil (extra virgin), plus more for drizzling
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. Activate the yeast by dissolving it with honey in warm water. Let it sit for about 5 minutes until foamy.
  2. Mix in flour, salt, and olive oil until you form a sticky dough. Cover and let rise in a warm place for 45–60 minutes until doubled.
  3. Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Spoon the risen dough into each muffin cup until about ¾ full. Drizzle with olive oil and sprinkle with rosemary, garlic, and sea salt.
  5. Bake for 18–20 minutes, rotating halfway through for even baking. Cool slightly before serving.
