  • 1/2 cup Chopped Yellow Onion
  • 1 Poblano Pepper (chopped)
  • 2 cups Shredded Chicken
  • 1 can Black Beans (15 oz.; drained)
  • 1/2 cup Frozen Corn
  • 3 cups Chicken Broth
  • 1/2 cup Heavy Cream
  • 1/2 cup Shredded Cheese (Cheddar or Mexican Blend)
  • 2 tsp Fresh Lime Juice

Instructions

  1. In a large saucepan over medium heat, melt the butter and sauté chopped onions and poblano pepper with half of your seasoning blend until tender (about 5–6 minutes).
  2. Stir in shredded chicken, black beans, frozen corn, chicken broth, and remaining seasoning blend. Bring to a gentle simmer for about 15 minutes.
  3. Mix in heavy cream and shredded cheese until melted and combined; allow to simmer for an additional 15 minutes.
  4. Stir in fresh lime juice, season with salt and pepper to taste.
  5. Serve hot and garnish with cilantro.
