  • 1 chicken breast
  • ¼ cup neutral-flavored oil (vegetable or canola)
  • 1 egg yolk
  • 2 tsp lime juice
  • 1 chipotle pepper in adobo sauce, finely chopped
  • ½ tsp smoked paprika
  • ½ tsp Dijon mustard
  • 1 tsp honey
  • 4 slices sharp cheddar cheese
  • 4 slices sturdy bread (French, focaccia, or sourdough)
  • 1 beefsteak tomato, sliced into ¼-inch rounds
  • Softened butter (for grilling)

Instructions

  1. Prepare the chipotle mayo by whisking together the egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Slowly drizzle in oil while whisking until emulsified. Stir in smoked paprika and chopped chipotle.
  2. Grill or pan-sear the seasoned chicken breast over medium heat for 4–5 minutes per side until cooked through; slice if needed.
  3. Butter one side of each slice of bread and spread chipotle mayo on the opposite side. Layer bread with cheddar cheese, chicken, tomato, more cheese, and top with another slice of bread.
  4. Heat a skillet or panini press over medium heat; grill sandwich until golden brown (3–5 minutes per side).
  5. Slice in half and serve hot.
